We have had more winter than I have seen here in Austin, Texas this year. I have loved every minute of it. Especially the fact that we have had 2 ice days and 2 delayed start days at school. I have really taken advantage of these magical extra days that my husband and I get to spend at home with the baby. Since Eliza has no concept of sleeping in on an ice days or weekends for that matter, I have taken advantage of being up at the crack of dawn by focusing on breakfast.
I have such a love hate relationship with breakfast. I love breakfast foods and adore a leisurely breakfast. However, the fact that I work at a school and have to be there at 7:30am means that breakfast in our house is usually the biggest stress of the morning and the last thing we think about as we head out the door. I then of course start to long for a better breakfast as soon as I am in the car. I am determined to to get eating a good breakfast into the morning routine, and will let you know how that goes. But for now, let's focus on my leisurely ice day breakfast love - biscuits. Why have I not made biscuits before?! Drop biscuits are so easy that they are now part of my very short repertoire of memorized recipes. They also fit into my new eating goal. I am trying to cut out processed foods. Though biscuits are not a pillar of healthy ingredients, they are simple and have no extra gross additives or preservatives in them, so for all intents and purposes, they fit the bill right?
Maybe I am the only person who didn't realize how awesome and easy it is to whip up some biscuits with this easy recipe. But if you were like me and not in the know, make some! Serve withe some jam, scrambled eggs, and plenty of coffee on your next leisurely morning.
Here is what you need...
2 cups flour
1 Tbs. baking soda
2 tsp. sugar
1/2 tsp. cream of tartar
1/4 tsp. salt
1/2 C melted butter
1 C milk
It looks like Texas will have 2 more days of winter, so I will be crossing my fingers for one more winter-extravaganza delay that anyone in a state that has winter all winter would laugh at.
